Things You’ll Need:

* 1 lb. spaghetti, uncooked
* 1/2 lb. bacon, diced
* 1 small to medium onion, diced
* 4 porcini mushroom, soaked soft, sliced
* 3 cloves fresh garlic, crushed and diced
* 4 eggs, beaten
* 1/2 lb. freshly grated Parmesan cheese
* 1/2 tsp. fresh ground pepper
* 1 large pot for boiling spaghetti
* 1 bowl for mixing
* 1 (10-inch) saute pan
* Paper towels for draining bacon


Instructions

Step 1
Put the large pot full of water on to boil. Heat saute pan over medium-high heat. Saute diced bacon until crisp. Remove bacon and drain on the paper towels.
Step 2
Pour off all bacon fat except for about 2 tbsp. Add garlic and onion to the fat and saute until fragrant and transparent. Do not burn the garlic. Add onions and garlic to the bacon.
Step 3
Beat eggs in a bowl with Parmesan cheese and pepper. Boil spaghetti noodles according to package directions. Drain spaghetti, reserving 1/2 cup cooking water.
Step 4
Add spaghetti back to the large pan over medium heat and toss to rewarm. Pour egg/cheese mixture and pasta cooking water into the spaghetti and stir briskly until all spaghetti is completely coated. Add bacon, onions and garlic and toss again to combine.
Step 5
Serve in heated pasta bowls with additional pepper and cheese to taste.


Tips & Warnings

* Try other dry grating cheeses, like Romano or Asiago, even Dry Jack.
* Substitute pancetta (Italian bacon) for bacon, if it's available.
* If the mix still seems a little dry, add a tablespoon or two of olive oil, cream or butter.
* For a real treat, use 1 1/2 pounds of fresh fettucine, instead of the dried spaghetti.
* You can also add other ingredients, like lightly cooked peas or mushrooms you've sauteed with the onion and garlic.
* Eggs and cheese should be at room temperature.
* Keep heat very low once you've added the eggs and keep stirring to avoid overcooking the eggs. Serve as soon as completely heated through.
* Whatever you do, don't use canned parmesan cheese. It won't melt and it has no flavor. Buy a block and grate it yourself for the best results.
